Honey + Cinnamon Roasted Nuts

ALL the fall feels. My house is smelling incredible with these Cinnamon + Honey Glazed Roasted Nuts.
Making nourishing + delicious dessert/snack options is totally possible plus this recipe only calls for 4 simple ingredients!
  • coconut oil
  • cinnamon
  • nuts
  • honey
The honey is added in last AFTER the nuts have roasted because heating it destroys a ton of its natural enzymes.
When baking my go-to sweeteners are maple syrup, coconut sugar or date sugar. All three contain trace minerals that are beneficial to the body when consumed in moderation. Check out my healthy no-bake cookie recipe which is also naturally sweetened!

If you want to kick it up a noche and try some seriously medicinal honey then manuka is absolutely incredible. With a host of nutritional benefit I have been consuming 1-2 tsp per day before bed as it also aids in melatonin production which helps you sleep like a baby.

Manuka honey is much pricier than regular honey but again I use it medicinally because of its potency so only a small quantity is needed to get amazing benefit. You will see that it is labeled by a UMF # between 5-16+. I aim for a minimum UMF of 10-16+ to ensure I am receiving its full nourishment and also pick one sourced from New Zeeland from a licensed company.

What ever sweetener you decide to use in this recipe, I know that you will LOVE its balance of sweet/salty for a hearty fall snack.

Honey + Cinnamon Roasted Nuts

This hearty snack or dessert option will leave your entire home smelling like fall. Sweetened with honey + cinnamon, you will balance your blood sugar while getting a healthy dose of plant protein!

  • 1 cup Raw almonds
  • 1 cup Raw walnuts
  • 1 Tbls Coconut oil (melted )
  • 1 tsp Cinnamon
  • 1/2 tsp Sea salt
  • 1 Tbls Honey
  1. Pre-heat oven to 325 degrees 

  2. In a medium mixing bowl toss in all ingredients expect for the honey

  3. Line a baking sheet with parchment paper and lay the nut mixture evenly on the pan

  4. Roast nuts for 10-12min (tossing halfway through)

  5. While nuts are still hot out of the oven toss back into the mixing bowl and stir in the honey until evenly coated 

  6. Transfer back to baking sheet to cool and store in a air-tight container for up to a week.
