No Bake Cookies are my all time favorite guilty pleasure! Something about that combination of chocolate and peanut butter that has me reaching for seconds every time. I of course had to put a healthy spin on this fudge cookie so after some experimenting this recipe blossomed. These cookies took me minutes to make and are completely guilt-free so I hope you enjoy them as much as I do!
Healthy No Bake Cookies
Addicting No Bake Cookies that are healthy enough to pass for a snack.
- 1/2 cup Coconut oil
- 2 cups Rolled oats
- 1/2 cup All natural peanut butter
- 1/2 cup Maple syrup
- 1/4 cup Raw cocoa powder
- 1/4 tsp vanilla extract
In a small sauce pan over low heat combine all ingredients expect for oats
Stir until it mixture reaches a smooth consistency and slowly add in the rolled oats
Combine all ingredients until evenly combined and plop 2 Tbls of batter onto a cookie sheet lined with parchment paper
Pop in the freezer for 20-30min to let the cookie harden and enjoy!
Since coconut oil melts at room temperature, it is best to store these cookies in the fridge.
