This soup is so comforting in the fall/winter months. I love to make a big batch on Sunday and enjoy leftovers all week long. The crock pot does all of the work for you which means more YOU time. Lentils are a legume rich is complex carbs, which have slow releasing fiber to keep you feel satisfied for hours. Loaded with antioxidant rich and detoxifying veggies this is one of my favorite go-to’s for busy weeks!
Lentil Detox Soup
A delicious and satisfying crock pot meal that can be prepared on Sunday for healthy meals all week.
- 2 cups Butternut squash
- 2 cups Carrots
- 2 cups Sweet potato
- 2 cups Celery
- 1 3/4 cup Dry lentils
- 1 Onion
- 5 cloves Garlic
- 8-10 cups Veggie broth
- 1 bunch kale
- 1 lemon
- 1 bunch parsley
- 1 tsp Sea salt (more to taste)
- 1 tsp Turmeric
- 1 tsp Cayenne (optional for added spice)
Peel and chop all veggies
Toss all ingredients (expect kale) into a crock pot and cook on high for 5-6 hours OR low for 7-8 hours
With a potato masher, mash soup OR throw 4 cups of the soup into a blender until smooth and pour back into crock pot
Add in 2-3 cups of chopped kale and parsley
Squeeze juice of half a lemon in and stir
Enjoy immediately and store left overs in air-tight container in fridge. This soups gets better after a day or two as the flavors harmonize.
